This is my go-to dessert. I never venture from this recipe. It took me about 2 years to get this combination just right. FYI, the night was cold but I decided either way to celebrate this Friday evening with my #1 girl.

This is Nancy's dish. Can't remember what it's called.

This is Nancy’s go-to noodle soup. It’s got pork, I think and the usual ingredients. So delicious but not spicy for me.

Cecy's Kimchi Ramen

Oh, yeah!!!!!!! This is what I’m talking about. This is MY go-to bowl. The Kimchi Ramen. I think they made it extra spicy for me this time because I started to feel really light headed. Is that normal? The inside of my ears started to feel the burn too. Bring it on, Kimchi Ramen!

And here is Nancy’s dish. She, of course, was very proud of this. I think at this point, I was still eating my dish and was only 1/2 way done.

I kid you not. These bowls are ginormous and are worth the $10. Pretty cheap, huh? Anyways, since we had plenty of time before we had to get back to our chains, we decided to go to Yogurtland for some dessert.

Do you see any yogurt i there?

I usually go with the following: green tea or vanilla yogurt topped with shaved almonds, walnuts, strawberries, blueberries, blackberries, kiwi, mango, mochi, condensed milk and graham cracker dust. Nancy goes the unhealthy route by topping her taro & coconut yogurt with…Nancy please elaborate in the comment section. My memory is mush.

Here is my soup from yogurtland. As I drove us back to work from lunch, my yogurt got all runny. It looks pretty disgusting but that didn’t stop me from eating this heavenly treat.

And this concludes our Friday. I mentally checked out right after my last bite.

What’s in your Field Trip Friday lunchbox?

Cecy’s Famous Pasta Carbonara

Pasta shells. Cooked and drained.

Pasta sauce: 1 tbsp of butter, 1/4 cup of onions, a bag of bacon cut into 1 inch pieces, 1/2 cup of peas, 1/2 cup of half & half.

Before making the pasta sauce, I first thawed the bacon from its packaging and then cooked it on its own while the pasta was in the pot boiling to death. I then began to melt the butter into a pan and added the minced onions. I let them sweat it out for about 3-4 mins on medium heat and then I added the half & half to it along with the peas and bacon. I let that heat up for a few minutes until it started to bubble.

1 lemon

The recipe calls for the juice of 1 lemon and zest, but I skipped adding the zest to it because I knew Izzy (my picky, 3-year-old, eater) was gonna spit it out and throw the plate on the floor if she didn’t like it.

I squeezed the juice of 1 lemon into the pasta sauce to give it some kick. MS's recipe asked for lemon zest but I skipped that part.

It’s coming along now.

Once the pasta sauce was ready, I transfered that over to the shells. All you do here is mix everything together and add your final touch of parmesan cheese (1/2 cup). My cookbook says to top the pasta with the cheese, but I justed mixed it all in.

Oh, do you see that container above my left arm? HAHAHAH! That’s the leftover bacon grease. I didn’t know what to do with it so I put it in that container. I should make a candle out of it and burn it whenever I feel like smelling the delicious flavor of cooked bacon. Or just burn it to make my neighbors jealous of my so called cooking. Pretty disgusting, I know. I ended up tossing it cuz it solidified and turned milky after I got back home from the gym.

Enjoy! Try this meal at home. I know it looks really heavy, but if you’re like me…you’ll be good and do a portion controlled meal. It’s “TO DIE FOR”.

This stuff is GOOOOOOOOOOOOOOD! Nancy was wondering why I would deny myself the amount she had. I told her that I’ve had so much will power lately that I’m on a roll. Thinking about it…I’m seriously stupid for passing up on more of this AMAZING lunch. Ok, focus!

Anywho, we continued our food journey to the nearest Best Buy parking lot for some Mexican fruit in a bag. I’m pretty sure it’s not called a “Mexican” fruit cart, but I’ve lived in a heavily populated Hispanic neighborhood for about 21 years that I just considered them all to be “Mexican” fruit carts.

1. I drop off the kid-o at day care.
2. I carpool to work with Nancy.
3. I get to my cubicle.
4. I switch my sunglasses to my regular glasses.
5. I turn on my computer.
6. Take a stroll to our pantry for my daily intake of Flavia (aka the worst free coffee known to man).
7. Then I take my sweet ass time getting back to my desk.

That there is my 9am-9:20am routine. Well, (this dumb dumb) I forgot to bring my regular glasses with me to work and left them in my car. Something I really need or I’ll look like a retard trying to read my monitor an inch away. So, I asked one of my co-workers to drive me back to Nancy’s place. Thanks for the ride, (co-worker’s name opted).

I do have to say that I’m a little jealous of Nancy’s food. Look at that beauty. I wonder where she found the time to make this delicious meal. Well, here it is people. TRADER JOE’S!!! That’s it. That’s the secret.

Today I found out that Nancy went to Italy about 5 years ago and had an amazing time there. I think she’s due to go on another trip soon. Don’t you?

Here is Izzy's bento box I'm "borrowing" for my lunches. It's called portion control people. PORTION. CONTROL.

This bento box is pretty cheesy for a grown ass woman like me, but does it look like I care. What you think? No, not really. This little contraption is 5×3 and holds a ton of food. My lunch is like the size of a kids’ meal or a small appetizer. A co-worker of mine bet someone that it was mine. Of course, he was right.

DESSERT – was provided by Carol, a fellow foodie. THANKS SO MUCH!!! The Beard Papas really hit the spot.

I had way too much fun when dessert arrived. I’m like a little kid in a candy store when people surprise me with food or dessert. I think we all were. Actually, I think Petra was kinda busy in her office dealing with “work” (tee hee. She really was though) that right when I called her all I said was “Petra, can you please come to my cube?” She thought I was serious. Hahahah! We just stood around the box of Beard Papas ooohing and ahhhing and then we dug in like hungry wolves. Out of nowhere, Carol drips her chocolate cream on my carpet. I guess that’ll be a reminder of the good ole days. Although, now it’s looking very much like a spot of grease on the carpet.

Today is back to work Monday. You can tell some people had a rough 3 day weekend as I got my 1st cup of coffee this AM. Whoa! They either came in really drunk this morning or with a bad hangover or just rolled out of bed from their 2 hour sleep.

Here’s what we had for lunch. Feel free to use your imagination because I forgot to bring my iPhone with me to lunch. You’re probably asking yourself “Why didn’t she just run down and get her phone”? Well, for those of you that don’t know me, all I have to say is that “I’m just way too fuckin’ lazy to walk anywhere” espcially if I have to leave my food unattended. Subway. I got our usual. Nancy & I always share a BLT w/ Avocado, extra bacon and a single line of mayo w/ black pepper.

I skipped lunch a few days here and there because of work. I had nothing but coffee.

In celebration of turning a year “younger”, a group of Nancy’s closest friends, including myself (DUH) had a bunch of drinks at some Karaoke club in K-town. Of course, I was fashionably late to this ball.
