Back by popular demand!

Seen as Nancy and I share our lunches, she mentioned to me that she wanted me to make some of my pasta carbonara and bring it in for lunch some time soon. Thanks to Martha Stewart, I’m a “cook”. I made it my mission to cook up some Fresh Angel-Hair Pasta with bacon & peas and bring it in to work for Nancy to enjoy. Here are a few pictures of my version of Martha’s masterpiece I call “Cecy’s famous pasta carbonara” cuz her version is such a mouthful (pun intended! I’m such a nerd).

Cecy’s Famous Pasta Carbonara

Pasta shells. Cooked and drained.

Pasta sauce: 1 tbsp of butter, 1/4 cup of onions, a bag of bacon cut into 1 inch pieces, 1/2 cup of peas, 1/2 cup of half & half.

Before making the pasta sauce, I first thawed the bacon from its packaging and then cooked it on its own while the pasta was in the pot boiling to death. I then began to melt the butter into a pan and added the minced onions. I let them sweat it out for about 3-4 mins on medium heat and then I added the half & half to it along with the peas and bacon. I let that heat up for a few minutes until it started to bubble.

The recipe calls for the juice of 1 lemon and zest, but I skipped adding the zest to it because I knew Izzy (my picky, 3-year-old, eater) was gonna spit it out and throw the plate on the floor if she didn’t like it.

I squeezed the juice of 1 lemon into the pasta sauce to give it some kick. MS's recipe asked for lemon zest but I skipped that part.

Once the pasta sauce was ready, I transfered that over to the shells. All you do here is mix everything together and add your final touch of parmesan cheese (1/2 cup). My cookbook says to top the pasta with the cheese, but I justed mixed it all in.

Oh, do you see that container above my left arm? HAHAHAH! That’s the leftover bacon grease. I didn’t know what to do with it so I put it in that container. I should make a candle out of it and burn it whenever I feel like smelling the delicious flavor of cooked bacon. Or just burn it to make my neighbors jealous of my so called cooking. Pretty disgusting, I know. I ended up tossing it cuz it solidified and turned milky after I got back home from the gym.

Enjoy! Try this meal at home. I know it looks really heavy, but if you’re like me…you’ll be good and do a portion controlled meal. It’s “TO DIE FOR”.

This stuff is GOOOOOOOOOOOOOOD! Nancy was wondering why I would deny myself the amount she had. I told her that I’ve had so much will power lately that I’m on a roll. Thinking about it…I’m seriously stupid for passing up on more of this AMAZING lunch. Ok, focus!

Anywho, we continued our food journey to the nearest Best Buy parking lot for some Mexican fruit in a bag. I’m pretty sure it’s not called a “Mexican” fruit cart, but I’ve lived in a heavily populated Hispanic neighborhood for about 21 years that I just considered them all to be “Mexican” fruit carts.

  1. I love it! I got to taste some and I must say that pasta was delicious! While I did not have the fruit, I have been to enough of the fruit stands to attest that they are quite delicious. While the oddity of buying fruit in a bag may deter some people from trying these fruit treats, I have to say that you must go out on a limb and do so. Not only are they healthy (freshly cut fruit with no added ingredients) they are also quite cheap. I think you can save yourself the trouble and money of going to Vons or Trader Joe’s to buy and cut this fruit for yourself.
